Squid ink pasta with seafood


Ingredients for 2 people:
- 200g squid ink spaghetti
- 300g homemade tomato sauce*
- 150g scallops
- 150g peeled king prawns (deveined)
- A handful of parsley
- Extra virgin olive oil
- Salt
- Pepper

*My homemade tomato sauce is extremely easy and fast to do: Sauté a couple of cloves of garlic, add chopped canned tomato, season with sugar, salt and black pepper and allow to simmer for around 40 minutes.


1. Boil the pasta in salted water according to package instructions. Aim for the pasta to be al dente.

2. In the meantime, sauté the prawns and scallops with a tablespoon of olive oil and a pinch of salt and pepper.

3. When the pasta is cooked, add the tomato sauce and mix well.

4. Serve the pasta on two dishes and top with the seafood, a little bit of parsley and splash of olive oil.
